Chocolate Chip Cookie Cake

This one is good! Basically, it’s a giant cookie in a traybake tin. The ideal treat for a party or bake sale. It’s a handy recipe for your collection, as the dough does not require chilling, so it’s a quick one to prepare.

The recipe is from a book called ‘Bake it, Slice it, Eat it’ – where all the recipes are baked in a classic traybake tin.

I happen to have the exact tin, which they use in the book. I own a Wilton traybake tin 22cm x 33cm x 5cm and use it so much.

Ingredients:

  • 250 g butter (I used salted)
  • 200 g soft light brown sugar
  • 250 g castor sugar
  • 2 medium eggs
  • 450 g self raising flour
  • 400g chocolate drops (milk or dark. I used milk)
  • To decorate: 30 g melted chocolate (milk or dark)

Method:

  1. Preheat the oven to 180° (or 160° fan). Line your baking tray.
  2. Melt the butter in a pan over a low heat, then transfer it to the bowl of your stand mixer or a large mixing bowl, along with both types of sugar, and cream together until smooth.
  3. Add the eggs one at a time, while still mixing, and beat until everything is combined and the mixture is a bit fluffy.
  4. Add the chocolate chips and sift in the flour. Mix with a hook attachment (if you have one) until it forms a dough, or use your hands to bring it altogether. Using a spatula or your hands, press the cookie dough into your lined tray.
  5. Bake for 40-45 mins if you want a soft cookie, or for a little longer if you want crunchy edges. It’s ok for it to have a little wobble in the middle.
  6. To decorate, flick melted chocolate across the top of the cake with a fork. If you want the cookie slice to have a touch of sophistication, you can sprinkle a pinch of sea salt flakes on top.

Some @thecakemum observations/tips:

  • I baked it for 45 mins and it was crispy on outside and soft in centre. My oven is quite hot (and old!), so keep in mind ovens vary. Next time, I’d probably do a few mins less.
  • I use Aldi brand chocolate chips. They seem to be the cheapest and widely available.
  • The recipe does not say how many portions you get from it. The cookie is huge and quite deep. I got 30 portions out of my bake. See photo below to see how I cut it. 15 squares from half of the cake.
  • It kept well in an airtight container & was still lovely a few days later.
